Rojo Mexican Grill Opens New Southdale Location
Stylish, “nuevo Mexican” fare comes to Edina
Edina, Minn., June 20, 2013 – Rojo Mexican Grill has grown beyond its West End roots and recently opened a new location at Southdale Center. The 7,300-square-foot space offers Southdale visitors the same stylish interpretations of Mexican cuisine that have kept the original St. Louis Park location hopping since its opening in 2010.
The new Rojo, located between Juut Salonspa and Herberger’s, seats more than 300 guests. The dining room is designed with an open view of the kitchen, which features three centrally located tables dedicated to preparing hand-rolled tortillas, fresh guacamole and salsa, all of which are made from scratch daily. Rojo’s cuisine centers on creative “nuevo Mexican” fare, with signature entrees including Black Chile, made with seasoned cubed pork, onions, Serrano peppers and pasilla chile sauce; and traditional fajitas, made with chicken or carne asada and served in a sizzling skillet. Other favorites, including quesadillas, tacos and enchiladas, are executed with bold new variations and unique presentations, at prices ranging from $5.75 to $24.95.
Complementing the food offerings is the Rojo Tequila Bar, with over 100 bottles of tequila housed in a glass tower. More than 30 tequila-based cocktails are available, as well as tequila flights that let patrons taste offerings from more than 17 distilleries. Rojo also offers a full liquor, wine and beer menu, along with specialty cocktails, including sangrias.
Rojo was founded by Minnesota natives Michael McDermott and Jason Merritt, both of whom have more than 20 years of restaurant experience. In fact, McDermott is a second-generation restaurateur, the son of Marno McDermott, who founded Chi-Chi’s in the 1970s. McDermott and Merritt developed the Rojo concept after years of traveling to Mexico, scouring the family recipe archive, and fine-tuning their inspired mix of traditional dishes and unexpected new culinary offerings.
“We didn’t feel anyone today was offering Mexican cuisine the way we wanted it,” said McDermott. “We wanted to give people really great Mexican dishes in a welcoming environment that’s warm and familiar, and that meets today’s standards for fresh food and atmosphere.”
“The atmosphere is key,” added Merritt. “Our open design lets guests see the freshness of our food, and we also think its great entertainment.”
The new Southdale Rojo is open for lunch and dinner daily, with patio dining available as weather permits. Hours of operation are 11 a.m. to 11 p.m. from Monday through Thursday,
11 a.m. to 12 a.m. on Friday and Saturday, and 11 a.m. to 10 p.m. on Sunday. After-work happy hour specials are available in the bar, lounge and lounge patio from 3 p.m. to 6 p.m. Monday through Friday, and late night happy hour specials are also on offer from 9 p.m. to 11 p.m. Monday through Thursday and 10 p.m. to 12 a.m. on Friday and Saturday.
The restaurant can also accommodate private parties and corporate meetings in its Rojo Room, which seats up to 36 guests and offers a full audio/visual set-up.
