New Mexican Restaurant For St. Louis Park

Today marks the opening of a new taste of Mexico in St. Louis Park. The Rojo Mexican Grill is the latest eatery to open in The Shops at West End area just off I-394 and Highway 100. The concept for the 5,800-square-foot restaurant was developed by the son of the local founder of Chi Chi’s, Michael McDermott. According to the restaurant’s press release, Rojo will “offer a full, value-conscious menu” of appetizers, salads, soups and entrees “influenced by the foods of Mexico.” Restaurant owners say they will serve up some new culinary creations along with traditional dishes but with new flavors or unique presentations. There’s also a Tequila Bar and diners can sample tequila from more than 17 different distilleries. You also can watch them make hand-rolled tortillas, fresh guacamole and salsa every day.
